Going Vegan Pt.3 (So hard guys!)

Hey there guys it is now January 10th and its been everything but easy going vegan! However I did upload a new youtube video talking about me going vegan so I highly recommend you checking that out! Also featured on there is a makeup tutorial about how I keep things simple! However for yous who don’t like the youtube… I have a couple pictures here about how my Vegan day is going today..

Today I went to the grocery store and it was anything but easy.. Looking for food items that have absolutely no animal Bi- Product in them what so ever is super hard..

 

Here is my Vegan Grocery haul.. here I have,

  • Veggie Tots
  • Bananas
  • Vegetable Broth
  • Frozen Mangos and Blueberries
  • Almond Milk
  • Raseberries
  • Spring Mix
  • Spinach (which I froze)
  • Cans of (Lentils,Black Beans,Split Peas
  • Oat Bread
  • Yves veggie Burgers

Now all of these things are super cheap and easy to just pick up!

Here is what I made for lunch out of all that is..  Yves veggie burger topped with avocado,  on spring mix, with a little relish on top, accompanied by some veggie (broccoli tots)

Going Vegan Pt 2.. (Im getting so hungry..)

 

Hey guys its Monday January 8th.. and its been 4 days now that I have been vegan, but only 2 I have documented so far..

Guys its hard. Im hungry. I feel like I am consuming more chick peas than I ever have.. Today for breakfast I had some Nature valley Cereal with raisins and almonds, and I used Cashew milk! I also had a coffee. with sweetner and cashew I topped my delicious cereal with bananas!

 

And for Lunch I made some super easy Falafels! IN MY ACTIFRY! I find that I am making so much in my actifry, I love it! For you who like Falafels yay for you! For you who don’t sorry bout your luck, but they are soo good! Here is the recipe!

Ingredients:

  • 1 can of chick peas drained and  minced in a food processor.
  • 3/4 cup of whole wheat flour
  • 3/4 cup of gluten free bread crumbs.
  • 1 teaspoon of lemon juice.
  • 1 teaspoon of cumin.
  • 1 teaspoon of olive oil.
  • 3/4 cup of fresh or dried parley.
  • 2 teaspoons of cilantro.
  • I also used coconut yogurt onto for some dip.

 

 

For Dinner I had some leftover spaghetti with my cauliflower and mushroom sauce, which I had earlier this week and some leftovers in the fridge for my dinner. It is so hard trying to stay sain while going vegan and also trying to meet all of your micro and macro nutrient numbers.- xoxo allison.

It’s harder than you think!! (Going Vegan pt 1)

So I can’t believe its already January 6th.. like why is time going by so quickly? Does anyone else feel like this, or is it just me? I mean ok Christmas was great and all.. but Im over it lets bring back the summer. I want to take my dog for a nice long warm walk.. but in other words I have lots of time right now that I can focus on my goal to eat no meat in 2018 and as of right now, I seem to be going strong.

I am already starting to feel so much lighter and not so drained all the time. The number one thing to remember is consistency. But.. Don’t get so hard on yourself if you have a chicken nugget or a piece of bacon here and there, because thats when you start feeling depressed about not being able to maintain your goal. Just remember everyday is a new start and this teaches everyone to be more conscious about what they are consuming.

However like I said if you are going out with your friends to a party or have a family outing where there is pizza with pepperoni or bacon. Don’t let Veganism get in the way of living a happy and regular lifestyle.

 

Lets look at what I ate today in a nutshell.. I feel like documenting my meals for you guys helps me keep accountable for what I am eating and always starving to be creative in my next meal choices.

For Breakfast: 

I had 1/2 cup steal cup oats, with my nuts & more peanut butter spread mixed in to it. Followed by a little sugar free chocolate syrup, and a Banana also green tea!

 

 

For Lunch:

My lunch was super easy today and surprisingly it filled me up quite a bit! I used some gluten free Nann bread and toasted it, Then I cut up half of an avocado and spread some hummus on top of that with a sprinkle of everything bagel spice from Trader Joe’s which is absolutely amazing , I sprinkle that sh** on everything!

Now after I had my delicious lunch, Which I can rarely eat something without following it up with some dessert or chocolate I would like to say. So I made these Vanilla donuts with chocolate glaze, and they are to die for! Check out the recipe for them here!

 For Dinner:

So Ive been trying to incorporate what we are originally having for dinner since, the rest. of my family isn’t necessarily not eating meat, Ive been trying to keep it as simple as possible. So for them I made Honey Garlic Chicken for dinner with this delicious sauce, so I drained the sauce and simmered it with some chick peas and put those in a wrap with lettuce (cheese optional and veganaise.) So super easy and a animal friendly dinner.

 

Also trying to keep my water intake high, it’s so cold outside and all I want is warmth, and fresh vegetables, going vegan is hard don’t get me wrong but whats keeping me going is knowing that my body is not a hosting  tomb or other animals. Looking more into the meat and dairy industry just has really altered my views on all of these issues.

When you consume fat, your brain receives a signal to turn off your appetite. Eating fat slows the breakdown of carbohydrates, which helps to keep sugar levels in the blood stable.

Fat is essential for every single cell in the body. Eating healthy fats supports skin health, enhances the absorption of fat-soluble vitamins, minerals, and other nutrients, and may even help boost the immune system.

 

Vegan Sloppy Joes!

Now after the fact that I top everything pretty much with avocados… here are some Vegan sloppy joes which are a great alternative to sloppy joes with ground beef. All you need it..

Ingredients:

  • 1 Can of Black Beans drained.
  • 1 can of man which or sloppy Joe mix/sauce
  • 1 small white onion diced up.
  • Hamburger buns./ I used ciabatta buns.
  • Half an avocado sliced.
  • Sprinkle of Vegan or regular Cheese.

Directions

Add 1 can of black beans drained into sauce pot. After beans are warmed, add your sloppy Joe sauce mix or spices, mix together and simmer. Toast ciabatta bun and put your sloppy Joe mixture onto your bun, slice an avocado on top and your good to go! Nothing easy. This meal is packed full of protein and is a great meat alternative.

Quick Easy Hearty Vegan Penee!

This super easy Hearty Vegan Cauliflower Penee has only 4 ingredients! While I have been a back and forth to trying to live a Vegetarian transitioning over into Vegan lifestyle has been far from easy.. I crave I guess you could say the texture of meat?.. which is gross I know… to subside this, I have been supplementing with a lot of beans, mushrooms, peppers and lots of hearty vegetables. Now going from that of one who eats lots of vegetables. Transitioning over to a Vegan lifestyle is a little bit more challenging .

Living a Vegan lifestyle and having no Animal Bi-Product what so ever is hard. Not going to lie,.. its very hard. That means.. no milk, no cheese, no fish and NOO BACON! Its not just necessarily not eating meat but, being more health conscious , from what we are putting in our mouths or on our bodies. Being more conscious about the world and living in a more peaceful unity was my decision to go vegan.

Also since I have such a huge sweet tooth and can never seem to subside it, I decided why not put my obsession to good use and write a book on my most favourite things!  Quick Hearty Vegan Cauliflower Penee!

 

Ingredients:

  • 1 Can of Organic Tomato or Pasta Sauce.
  • 1 Can of mushrooms (slices)
  • 1 Cup of roasted cauliflower, ( I did mine in my actifry)
  • 2 Cups of Whole Wheat Penee Pasta.
  • Dash of seasoning salt and parsley.

Directions

Step 1: Add your pasta or tomato sauce to sauce pan.

Step 2: Add in Mushrooms and simmer for 3 mis.

Step 3: Roast Cauliflower until golden brown. (I roasted mine in my Actifry.)

Step 4: Add the Cauliflower to your Pasta sauce mixture.

Step 5: Simmer for 5 mins.

Step 6: As your mixture is simmering, cook your penne pasta, when pasta is done cooking, drain.

Step 7: Pour your delicious Cauliflower & Mushroom Pasta sauce on top of your penee and enjoy! So Easy, So Good!

Meet Aster, our 9 week old Jack Russel!

I would like to introduce you to our newest addition ‘Aster’ he is a 9 week old pure bread Jack Russell, and we welcomed him into our family on December 16th. Aster loves to sleep, he loves to play fetch and tug of war and he loves being in charge.

We also have two cats in our house so our place is pretty full. Now that we have Aster we couldn’t imagine life without him. Over the couple months, I have been undergoing test for having epileptic seizers, so I have been off work and my drivers license unfortunately is under suspension in the mean time. Never the less, I am trying to stay positive and my head held high,.. Aster has been a great distraction when it comes to my mental health. I feel like the fine line between canines and mental health are misunderstood or lacking. ‘Aster’ has helped me huge when it comes to my panic attacks, anxiety and depression, He has brought so much joy to my family.
