So I can’t believe its already January 6th.. like why is time going by so quickly? Does anyone else feel like this, or is it just me? I mean ok Christmas was great and all.. but Im over it lets bring back the summer. I want to take my dog for a nice long warm walk.. but in other words I have lots of time right now that I can focus on my goal to eat no meat in 2018 and as of right now, I seem to be going strong.
I am already starting to feel so much lighter and not so drained all the time. The number one thing to remember is consistency. But.. Don’t get so hard on yourself if you have a chicken nugget or a piece of bacon here and there, because thats when you start feeling depressed about not being able to maintain your goal. Just remember everyday is a new start and this teaches everyone to be more conscious about what they are consuming.
However like I said if you are going out with your friends to a party or have a family outing where there is pizza with pepperoni or bacon. Don’t let Veganism get in the way of living a happy and regular lifestyle.
Lets look at what I ate today in a nutshell.. I feel like documenting my meals for you guys helps me keep accountable for what I am eating and always starving to be creative in my next meal choices.
I had 1/2 cup steal cup oats, with my nuts & more peanut butter spread mixed in to it. Followed by a little sugar free chocolate syrup, and a Banana also green tea!
My lunch was super easy today and surprisingly it filled me up quite a bit! I used some gluten free Nann bread and toasted it, Then I cut up half of an avocado and spread some hummus on top of that with a sprinkle of everything bagel spice from Trader Joe’s which is absolutely amazing , I sprinkle that sh** on everything!
Now after I had my delicious lunch, Which I can rarely eat something without following it up with some dessert or chocolate I would like to say. So I made these Vanilla donuts with chocolate glaze, and they are to die for! Check out the recipe for them here!

So Ive been trying to incorporate what we are originally having for dinner since, the rest. of my family isn’t necessarily not eating meat, Ive been trying to keep it as simple as possible. So for them I made Honey Garlic Chicken for dinner with this delicious sauce, so I drained the sauce and simmered it with some chick peas and put those in a wrap with lettuce (cheese optional and veganaise.) So super easy and a animal friendly dinner.
Also trying to keep my water intake high, it’s so cold outside and all I want is warmth, and fresh vegetables, going vegan is hard don’t get me wrong but whats keeping me going is knowing that my body is not a hosting tomb or other animals. Looking more into the meat and dairy industry just has really altered my views on all of these issues.
